Thai beef & mango wraps

Ingredients

  • 1 lime
  • 1 tsp fish sauce
  • 1/2 tsp granulated sugar
  • 1/2 tsp hot chili-garlic sauce
  • 1/4 cup coarsley chopped cilantro
  • 125 g shaved or thinly sliced roast beef
  • 1/2 ripe mango , peeled
  • 1/2 small red bell pepper
  • 2 large flour tortillas
  • 1 cup mesclun greens

Instructions

  • Squeeze about 2 tbsp (30 mL) lime juice into a medium-size bowl. Stir in fish sauce, sugar, chili-garlic sauce and coriander. Add shaved roast beef. If using sliced roast beef, first slice into thin strips, then stir into lime mixture.
  • Slice mango and pepper into thin strips. Lay tortillas on counter. Place greens across centre of each. Top with beef mixture, mango and pepper. Fold left and right tortilla edges toward centre. Fold bottom tortilla edge toward centre, then roll up. Fasten with toothpicks. Slice rolls in half.
