Chatelaine Triple Tested

The humble sandwich goes haute. Build a better sandwich with a few fresh ingredients and some creative upgrades.

Ingredients

  • 227-g pkg imitation crabmeat, separated into large chunks

  • 2 tbsp mayonnaise

  • 1/2 tsp sriracha hot sauce

  • 1/8 tsp dark sesame oil

  • 2-Jan avocado, finely diced

  • 1/4 cup finely diced cucumber

  • 1/4 cup finely chopped pickled ginger

  • 4 plain, unsalted rice cakes, or corn cakes

  • 1/2 sheet nori, cut into matchsticks

  • 1 tsp toasted sesame seeds, optional

Instructions

  • Stir crab with mayo, hot sauce and sesame oil in a medium bowl. In another medium bowl, stir avocado with cucumber and pickled ginger.

  • Assemble by placing crab in an even layer on rice cakes. Top with avocado mixture, then nori and sesame seeds. Serve immediately.
