1 tbsp Dijon mustard
4 tsp white wine vinegar
1/2 tsp dried tarragon leaves
1/2 tsp salt
1 cup olive oil
In a medium-size bowl, whisk Dijon with vinegar, tarragon and salt. Slowly whisk in oil until evenly mixed.
Store, covered, or pour into a jar and seal. Dressing will keep well, refrigerated, up to 1 week. Whisk or shake dressing before using. Great drizzled over mixed greens, potato or pasta salad. Or spoon a little over hot grilled chicken or fish.
