Sicilian zucchini boats

Ingredients

  • 4 zucchini, halved lengthwise

  • 1/2 tsp salt, divided

  • 1 plum tomato, diced

  • 1 garlic clove, finely chopped

  • 1/4 cup chopped parsley

  • 1/4 cup crumbled feta

  • 2 tsp panko

  • 1/2 tsp olive oil

Instructions

  • PREHEAT oven to 350F.

  • HALVE zucchini lengthwise. Scoop out flesh, leaving 1/4-in. border. Arrange on a baking sheet, cut-side up.

  • SPRINKLE with 1/4 tsp salt. Stir tomato with garlic, parsley, feta, olive oil and remaining 1/4 tsp salt. Scoop into prepared zucchini. Sprinkle each with panko and olive oil.

  • BAKE until tender, 25 min. Broil until golden, 1 to 2 min.
