HALVE zucchini lengthwise. Scoop out flesh, leaving 1/4-in. border. Arrange on a baking sheet, cut-side up.
SPRINKLE with 1/4 tsp salt. Stir tomato with garlic, parsley, feta, olive oil and remaining 1/4 tsp salt. Scoop into prepared zucchini. Sprinkle each with panko and olive oil.
BAKE until tender, 25 min. Broil until golden, 1 to 2 min.
