A new twist on your classic burger recipe.
500 g ground bison or extra-lean ground beef
1/4 cup chopped parsley
1/3 cup chopped dried cherries
1/4 cup minced red onion
1 tbsp Worcestershire sauce
2 tsp grainy mustard
1/4 tsp salt
PREHEAT barbecue to medium.
STIR meat with parsley, cherries, onion, Worcestershire, mustard and salt in a medium bowl. Mix gently with your hands or a fork. (Over-mixing can toughen burgers.) Shape into 4 1/2-in.-thick patties. Make a shallow depression in centre of each to help keep their shape while cooking.
OIL grill. Barbecue burgers, with lid closed, until cooked through, 4 to 5 min per side.
