Peppermint Bark Cheesecake Bars

This festive cheesecake for a crowd has all the flavours of the classic holiday candy and is sweetened almost entirely with white chocolate. If you can get hold of peppermint oil, it will give an even more vibrant mint taste.

Ingredients

  • 3 cups chocolate cookie crumbs, such as Oreo

  • 3/4 cup unsalted butter, melted

  • 6 tbsp granulated sugar

  • 1/4 tsp salt

  • 2 250-g blocks cream cheese, at room temperature

  • 3 large eggs, at room temperature

  • 2 egg yolks, at room temperature

  • 1 1⁄4 cups sour cream

  • 2 1⁄2 cups white chocolate chips, melted

  • 1 tsp peppermint extract or 45 drops peppermint oil

  • red gel food colouring

  • whipped cream, for garnish (optional)

  • crushed candy canes, for garnish (optional)

Instructions

  • Position rack in centre of oven, then preheat to 350F. Spray a 9 × 13-in. pan with oil, then line with parchment.

  • Stir cookie crumbs with butter, sugar and salt in a medium bowl until combined. Press firmly into bottom of prepared pan. Bake for 10 min. Remove from oven and set aside to cool completely.

  • Meanwhile, using an electric mixer on medium, beat cream cheese in a medium bowl until smooth. Beat in eggs and yolks one at a time. Stir in sour cream, then melted chocolate, until combined. Stir in peppermint extract.

  • Reserve 1⁄2 cup cheesecake mixture in a small bowl. Pour remaining cheesecake mixture evenly over cooled crust. Stir enough food colouring into reserved mixture to achieve desired shade of red. Dollop red mixture over cheesecake mixture in pan, then swirl through using a butter knife to create a marble effect.

  • Bake cheesecake until just set, 40 to 45 min. Transfer to a rack to cool completely, then refrigerate for at least 8 hrs.

  • To serve, cut into 16 rectangles. Garnish each piece with whipped cream and crushed candy canes, if desired.
