Take these traditional hotcakes to the next level with a few extra ingredients. Top with berries and drizzle with maple syrup, then serve.
1/2 cup 10% cream
2 eggs
2 tbsp granulated sugar
1/4 tsp cinnamon
1/8 tsp salt
8 homemade English crumpets
butter, divided
WHISK cream with eggs, sugar, cinnamon and salt in a 9 × 13-in. baking dish. Add English crumpets and let soak, flipping halfway through, 10 min.
MELT 1 tbsp butter in a large non-stick frying pan over medium. Add half of crumpets. Cook until golden, 2 to 3 min per side. Repeat with remaining butter and crumpets. Serve with maple syrup.
