Recipes for Canada Day: lobster roll appetizers

Chatelaine Triple Tested

These bite-sized snacks are perfect for New Year's entertaining or a post-holiday recess.

Ingredients

  • 2 cups chopped cooked lobster meat, (3 to 4 lobster tails)

  • 1/2 cup diced celery

  • 1/3 cup mayonnaise

  • 1 green onion, finely chopped

  • 2 tbsp chopped fresh parsley

  • 1 tsp lemon zest

  • 1 tbsp lemon juice

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1/8 tsp cayenne pepper

  • 10 small brioche buns, (or dinner rolls)

  • 4 tsp melted butter

Instructions

  • PREHEAT oven to 400F. Stir lobster, celery, mayo, onion, parsley, lemon zest, lemon juice, salt, pepper and cayenne in a medium bowl.

  • CUT into the buns about halfway through. Brush tops and insides with butter and place on a baking sheet. Toast for 5 min.

  • DIVIDE lobster mixture among buns. Serve immediately.
