Fancy up your cheese

When unexpected guests drop by (and, trust us, they will), here's a quick and delicious snack you can serve along with a nice bottle of wine. All you need is a 16-oz log of plain soft goat cheese, drizzled with 2 tsp extra-virgin olive oil, then sprinkled with 1 tbsp fresh thyme leaves, 1/4 tsp chili flakes, 1 tbsp lemon zest and freshly cracked black pepper. Serve with crackers, for a fresh take on the seasonal cheese ball.
