- Combine all ingredients except sake, soda and one piece of pineapple in a highball glass. Muddle until fruit is mashed. Add sake, then fill the glass with crushed ice. Top with soda. Garnish with pineapple and more mint. (This refreshing, thirst-quenching fusion gets shaken up by Montreal mixologist Lawrence Picard at Café des Éclusiers.)
*For simple syrup, bring equal parts sugar and water to a boil. Cool before using.
