Fresh, tart and slightly sweet, this trendy Cuban cocktail is our pick for late summer's best backyard sipper. It sends a chill right down to your flip-flops. Freshly squeezed lime juice is the key--don't even consider bottled concentrate.
24 large mint leaves
1/4 cup granulated sugar
1 cup freshly squeezed lime juice, about 10 limes
1 cup white rum
1 cup soda water
ice cubes
mint sprigs, optional
Place mint leaves and sugar in a pitcher. Using a wooden spoon, mash leaves with sugar against side of pitcher to release flavour. Stir in lime juice and rum until sugar dissolves. Stir in soda. Fill glasses with ice. Top with mojito mixture. Garnish each glass with a sprig of mint.
