When my husband took his first bite of the Singapore noodles he immediately announced that it tasted 'restaurant good'. I will take that as a compliment, thank you. This is yet another easy-to-prepare weeknight dinner. In just 30 minutes, we were able to sit down to a tasty meal full of delicious, exotic flavours. I haven’t been to Singapore (yet!), but I did love these noodles. And if people in Singapore eat like this every day, then I’d like to book myself for an extended vacation to Southeast Asia.

Let me begin with the end: while cleaning up after our delicious dinner of Pistachio-crusted salmon, I was elated to discover what looked like slender sheets of toffee attached to the foil that was used to bake the salmon. It wasn’t toffee, but rather the runoff from the sauce that was brushed onto the salmon. "Dare I try it?" I asked myself. I like to eat chocolate flavoured with cayenne pepper, so why not try maple curry Dijon toffee? As you can probably guess, I tried it. Let me just say that I really enjoyed cleaning up this dinner. And that the foil had very little residue on it once I (finally) disposed of it.

Extremely tasty, fast to make and easy enough to spice it to your liking: a hit in our family—or, at least, with my husband, our toddler and me. Our 19-year-old housemate/student/my sister-in-law was a little less enthusiastic as she has issues looking at shrimp on her plate. If shrimp are submerged in soup, mind you, she can easily gobble them up and ask for another helping (like with the Restaurant-style ginger-scented shrimp and mushroom soup), but there is something about seeing shrimp curled up on her plate that turns her off. For the record, she doesn’t do well with having a whole fish, head and all, on her plate, either.
