Bring 1 1/2 cups water to a boil in a saucepan. Rinse 1 cup quinoa with water. Drain. Stir into boiling water along with 1 cinnamon stick and 1/4 tsp salt. Simmer, covered, until tender, about 15 min. Remove from heat and let stand, covered, for 5 min. Fluff with a fork and stir in 1/2 cup toasted skin-on sliced almonds, 1/4 cup crumbled feta and 2 tbsp chopped parsley.
