Grown-up PB with boozy bananas

The humble sandwich goes haute. Build a better sandwich with a few fresh ingredients and some creative upgrades.


Ingredients

  • 2 tbsp butter
  • 1/4 cup peanuts , chopped
  • 2 tbsp brown sugar
  • 1/4 tsp cinnamon
  • 3 tbsp spiced or dark rum
  • 2 ripe bananas , thinly sliced diagonally
  • 4 slices egg bread
  • 1/2 cup natural unsweetened peanut butter

Instructions

  • Melt butter in a medium saucepan set over medium. Add peanuts, sugar and cinnamon. Stir until sugar melts, about 2 min. Remove from heat. Stir in rum and bananas until coated.
  • Toast bread. Spread each slice with 2 tbsp peanut butter. Top with bananas. Serve immediately.
