Lately I’ve been dreaming of Italy and with the mini sous chef still so little, it's off the table for at least a few more years. But that doesn’t mean I can’t bring Italy to my kitchen, right?

It's hard to separate Thanksgiving from food — we instantly associate dishes like roasted turkey, creamy mashed potatoes, and homemade gravy with the holiday. This year, however, I'll be celebrating Thanksgiving in a different way; I've stopped eating meat, so many of the staple options for the holiday are not up for consideration for our meal.

When hosting a potluck I like to do the main course. Turkey doesn’t intimidate me anymore, in fact it’s one of the easiest main courses in my repertoire. But I also love a roast pork, beef bourguignon or even our school favourite, lasagna.
