Use your waffle iron for something a little different this week: these cheesy snacks are the perfect garnish for with salad (or served as an appetizer, filled with dressed microgreens).
2 cups grated cheddar
1 cup grated parmesan
1/2 tsp smoked paprika
PREHEAT a waffle iron.
TOSS cheeses with paprika until well combined. Scoop 1/4-cup portions onto plates of waffle iron and cook until golden and crisp, 5 min. Remove crisps and immediately drape over the back of a wooden spoon for 10 sec; they will firm up as they curl. Repeat with remaining mixture.
