
Butternut squash:
Nutritious mash
Peel, chop and steam over simmering potatoes. Mash the two together with a pinch of nutmeg and some cream.
Comfort dish
Microwave until soft and scrape into a bowl. Stir in brown sugar to taste, slivered almonds and butter. Broil until top is toasty.
