Warm spinach and artichoke dip
Chop and sauté 2 cups with 1 tsp oil until wilted. Stir in 1/2 block softened cream cheese, 1/2 cup sour cream and 1/2 cup chopped canned artichokes. Season with pepper. Serve with tortilla chips.
Creamy spring soup
Sauté some chopped onion and minced garlic until onion is soft. Add spinach and vegetable broth. Bring to a boil, then purée with 1/2 cup cream.
