Crispy chicken fingers
Stir together equal parts matzo meal and sliced almonds. Dip chicken tenders into beaten eggs, then coat with matzo-meal mixture. Pan-fry in oil until golden on both sides.
Pecan baked apples
Stir 1/4 cup matzo meal with 2 tbsp each brown sugar and chopped pecans. Mash in 3 tbsp cold, cubed butter until crumbly. Core 2 apples and place on a foil-lined baking sheet. Fill with matzo-meal mixture. Bake at 350F until tender and bubbly, 30 min.
