Hazelnuts/macadamia nuts/almonds 1 cup (250 mL) whole

Rice, white 1 cup (250 mL), cooked

1 cup (250 mL) cooked barley
OR

Seasonings + spices

Garlic 1 clove

1/8 (0.5 mL) tsp garlic powder

1/2 tsp (2 mL) garlic salt + reduce salt by 1/2 tsp (2 mL) in recipe

Ginger, dry 1 tsp
(5 mL)

2 tsp (10 mL) chopped fresh ginger

2 tsp (10 mL) chopped or puréed bottled ginger

Ginger, fresh 1 tsp (5 mL), minced

1/2 tsp (2 mL) ground dried ginger

Hot pepper sauce 1 tsp

3/4 tsp (4 mL) cayenne pepper + 1 tsp (5 mL) vinegar
Saffron 1/4 tsp

1 cup (250 mL) chicken broth

Brandy 1 cup
(250 mL)
1 tsp (5 mL) imitation brandy extract + enough water to make 1/4 cup (50 mL)
Rum 1 tbsp
(15 mL)
1/2 tsp (2 mL) rum extract + enough water to make 1 tbsp (15 mL)
Wine 1 cup
(250 mL)

1 cup (250 mL) chicken or beef broth
OR

1 cup (250 mL) fruit juice mixed with 2 tsp (10 mL) vinegar
OR
1 cup (250 mL) water (need wine for flavour in bourguignon)
