Spicy spuds
Stir 4 diced Yukon Gold potatoes with 1 cup water and 3 tbsp curry paste. Cook, covered, on medium-high until tender, 15 to 20 min. Stir in chopped cilantro.
Indian-inspired omelette
Cook chopped bacon in a non-stick frying pan until crisp. Whisk curry paste with eggs and sliced green onion. Pour over bacon. Cook until set.
