Vegetable trio kebabs

Ingredients

  • 6 wooden skewers , about 8-in. long
  • 3 to 4 small, thin zucchini
  • 1 to 2 sweet bell peppers , seeded and quartered
  • 12 to 18 large button mushrooms
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • pinch cumin
  • pinch salt
  • pinch pepper

Instructions

  • If using wooden skewers, soak them in warm water. Cut zucchini crosswise into 3 or 4 pieces. Cut pepper quarters into 3 or 4 pieces.
  • Thread zucchini and peppers alternately on skewers, with whole mushrooms skewered through stems.
  • Stir oil with vinegar, cumin, salt and pepper. Brush over kebabs. Grill, turning occasionally, until vegetables are golden, from 5 to 6 minutes.
