6 wooden skewers, about 8-in. long
3 to 4 small, thin zucchini
1 to 2 sweet bell peppers, seeded and quartered
12 to 18 large button mushrooms
1 tbsp olive oil
1 tsp balsamic vinegar
pinch cumin
pinch salt
pinch pepper
If using wooden skewers, soak them in warm water. Cut zucchini crosswise into 3 or 4 pieces. Cut pepper quarters into 3 or 4 pieces.
Thread zucchini and peppers alternately on skewers, with whole mushrooms skewered through stems.
Stir oil with vinegar, cumin, salt and pepper. Brush over kebabs. Grill, turning occasionally, until vegetables are golden, from 5 to 6 minutes.
