Fast grilled potatoes

Ingredients

  • 4 small baking potatoes
  • 1 tbsp olive oil
  • freshly ground black pepper
  • pinches of cayenne pepper
  • pinches of salt

Instructions

  • Place whole unpeeled potatoes in microwave and cook on high for 6 minutes in a 925-watt oven (8 minutes in a 700-watt oven) until almost soft. Then, wrap in a tea towel. Let sit for 2 minutes.
  • Slice into thirds lengthwise and place in a large bowl. Drizzle with oil. Grind black pepper overtop. Sprinkle with cayenne and salt. Toss until evenly coated. Spread out on a broiler pan. Broil until golden, about 4 to 5 minutes per side. Serve with sour cream for dipping.
