4 large frozen beef or sirloin burgers
2 cups sliced mushrooms
1/4 cup marsala, or sherry
1/2 tsp coarsely ground black pepper
pinch of cayenne pepper
Lightly brown frozen burgers in a non-stick frying pan set over medium-high heat, about 2 to 4 minutes per side. Drain off any fat, leaving just a film on pan. If frying pan is not large enough to brown burgers all at once, sauté in batches of two. Burgers shrink as they cook, allowing 4 to eventually fit in a large frying pan.
Remove browned burgers, then add mushrooms to pan. Stir-fry for 2 minutes. Add marsala or sherry. Sprinkle with pepper and cayenne. Return burgers to pan. Reduce heat to medium, cover and simmer until burgers are done, from 7 to 10 minutes. Remove burgers. Boil sauce, uncovered, until slightly reduced, and spoon over top of burgers.
