3/4 cup rosé or white wine
1 large onion, thinly sliced
1 tsp paprika
4 skinless, boneless chicken breasts
1/3 cup regular sour cream
Place wine, onion and paprika in a large frying pan set over medium-high heat. Boil gently, uncovered and stirring often, until onion has softened, about 5 minutes.
Meanwhile, cut chicken into bite-size strips. Then, stir into onion. Reduce heat to medium-low and stir often, uncovered, until chicken is cooked, about 10 minutes.
Remove chicken to a warm plate and cover. Increase heat to medium-high and boil down sauce, uncovered and stirring often, until about 1/2 cup (125 mL) remains. Whisk in sour cream and pour over chicken.
