Avocado & tomato scramble

Ingredients

  • 4 eggs
  • 1 tbsp water
  • butter
  • 1 pinch salt
  • chopped avocado
  • chopped tomatoes
  • chopped green onion
  • 2 tortillas

Instructions

  • Whisk 4 eggs with water. Place a non-stick frying pan over medium heat. Add enough butter to coat. Pour in eggs. Sprinkle with salt. Stir gently until set. Scatter with avocado, tomatoes and green onions. Wrap in tortillas.

We love eggs – they’re great for a leisurely weekend brunch yet fast enough to scramble on a weekday morning for a protein boost.
