Chimichurri is a favourite Argentinian sauce made of chopped parsley, cilantro, garlic, vinegar, and oil. For this version, cubes of avocado are folded into the sauce.
IN a small bowl, stir the lemon juice, vinegar, garlic, salt, red pepper flakes, oregano, and black pepper together.
WHISK in the oil to blend, then stir in cilantro and parsley. Gently fold in the avocados.
