Assortment of small fruit, such as pears, kumquats, red and yellow plums, tangerines, lychees and figs
Wash fruit well. Cut red and green grapes into small bunches. Do not cut remaining fruit or it will discolour. Fill a large, decorative glass bowl or tall wide vase half full with cold water and a few ice cubes. Slide fruit into water, alternating different types. Top bowl up with water to within 1 inch (2.5 cm) of rim. Fruit bowl can be assembled up to 2 hours in advance, but keep refrigerated.
There's nothing more refreshing on a scorching-hot day than chilled fresh fruit. Choose firm fruit that will hold up well to a dunk in ice water. Avoid using fruit with a high water content as it may become mushy.
