Smartly seasoned beef and meat loaf

Ingredients

  • 2.5 kg lean ground beef

  • 1 large Spanish onion, or 2 cooking onions

  • 6 to 8 green onions, thinly sliced

  • 4 large garlic cloves, minced

  • 1 bunch fresh parsley, or 1/4 cup dried parsley

  • 1 tbsp Worcestershire sauce

  • 1 tsp Tabasco sauce

  • 1 1/2 tsp salt

  • 1 tsp ground black pepper

  • 2 eggs

  • 1/2 cup rolled oats

  • 2/3 cup barbecue sauce, ketchup or 284-mL can tomato soup

Instructions

  • Big-batch seasoned beef Leave meat in the refrigerator so it remains cold while preparing ingredients. Finely chop Spanish onion or cooking onions and place in a large mixing bowl. Add thinly sliced green onions, if using. Mince garlic and add to onions. Wash fresh parsley under cold running water. Spin in a salad spinner or pat dry with a tea towel. Finely chop and measure out about 1 cup. Add to onion mixture along with Worcestershire sauce and Tabasco. Sprinkle with salt and black pepper. Add beef. Using your hands, work onion mixture into beef.

  • Next-night Beefy Spanish rice Place 3 cups of seasoned-beef mixture in a plastic bag, tightly seal and refrigerate to make rice (this recipe is also in the recipe file) for the following day, or place in freezer to use whenever you want.

  • Meat loaf Add eggs and rolled oats to remaining beef mixture. Again work in with your hands until evenly mixed. Remove 4 cups of this mixture to make Fabulous Freezer Burgers (see point 5), cover and refrigerate.

  • Use all the remaining mixture in bowl for a meat loaf. Begin by greasing a 9x5-inch (1.5-L) loaf pan or coat with cooking spray. Using your hands, work about 1/3 cup barbecue sauce or ketchup or half of can of soup into the meat mixture in bowl. Gently pack into loaf pan. Smooth top. Spoon remaining barbecue sauce, ketchup or soup over meat loaf. Bake right away or refrigerate, covered, for up to 1 day. To bake, preheat oven to 350F (180C). Bake meat loaf, uncovered, on centre rack for 1 hour. Drain off any liquid, then continue baking until a knife feels very warm when inserted in the middle, about 30 more minutes.

  • Freezer burgers Divide 4 cups of refrigerated mixture into 6 portions. Line a baking sheet with waxed paper. Shape mixture into burgers about 1 inch (2.5 cm) thick and 3-1/2 inches (8 cm) wide. Space slightly apart on baking sheet. Place in freezer until firm, about 2 hours. Peel frozen burgers off waxed paper and place in a plastic bag. Removing as much air as possible, seal tightly and return to freezer.
