Bruléed ginger mangoes

This is a modern take on the brown sugar and grapefruit classic. Broiling the flesh of a mango brings out its juicy sweetness. Make it even more special by sprinkling chopped candied ginger overtop just before serving.

- Position an oven rack in top third of oven. Preheat broiler. Do not peel mangoes. Slice both cheeks from stone of each mango. Place them, flesh-side up, on a rimmed baking sheet. Sprinkle with ginger, then with sugar.
- Broil on top rack of oven until sugar caramelizes and flesh turns lightly brown, 3 to 6 min. Remove to plates. Best served warm.
