Kale-Walnut Pesto

Mix it into cooked spaghetti, or smear it over grilled chicken. Delicious!

Ingredients

  • 1 small bunch kale, ribs removed (about 4 1/2 cups)

  • 1/2 cup grated parmesan

  • 1/2 cup halved walnuts, toasted

  • 1 small garlic clove

  • 1/2 tsp salt

  • 1/3 cup olive oil

Instructions

  • BOIL a large pot of water. Chop kale into small pieces, then add to boiling water. Cook for 30 sec. Drain, then rinse well under cold water. Drain well.

  • WHIRL kale with parmesan, walnuts, garlic and salt in a food processor until finely chopped. Season with fresh pepper. With motor still running, slowly add oil, scraping down sides of bowl, if needed.

Calories 58, Protein 2g, Carbohydrates 2g, Fat 5g, Fibre 1g, Sodium 85mg.
