- STIR flour with sugar and salt in a large bowl until combined. Add butter. Using your fingertips, work mixture until finely crumbled. Stir in ice water just until pastry can easily be formed into a ball. Add more ice water, 1 tbsp at a time, if needed. Dough should not be sticky. Form into a disc. Wrap with plastic and chill in refrigerator for 30 min.
