Finnish spinach roll

Ingredients

  • 1/2 cup flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 separated eggs

  • 2 cups milk

  • 1 pkg chopped spinach, cooked

  • 1/4 cup ham, chopped in little squares

  • 2 tbsp butter

  • pinch nutmeg

Instructions

  • Cook spinach in microwave for about 5 minutes. Then toss spinach and ham in 2 tablespoons of butter in a frying pan with salt and pepper and nutmeg. Set aside.

  • Turn oven on to 350 degrees.

  • In a large bowl add flour with baking powder and salt.

  • In a smaller bowl beat egg yolks with milk and add to flour mixture. Whisk quickly until smooth.

  • In a medium sized bowl beat egg whites until stiff. Then fold into batter.

  • Grease Jelly roll pan with Pam......or melt 2 Tablespoons of butter in Jelly roll pan making sure it is completely covered. Pour in Batter.

  • Bake in 350 degree oven for about 20 minutes.

  • Remove from oven and let partially cool. Very Hot!

  • Spread spinach and ham mixture evenly over crepe and then roll Jelly roll fashion.

  • Serve sliced while hot with cheese sauce.

  • CHEESE SAUCE - Melt 2 tablespoons of butter in saucepan, whisk in 3 tablespoons of flour and cook over medium heat for 1 minute. Gradually whisk in 2 cups milk. Bring to a boil stirring constantly, until smooth and thick. Add 1 cup grated cheese or 6 slices of cheese.

You will need a small, medium and large bowl for this recipe. Spinach Roll may be made ahead and frozen (wrap in aluminum foil). Make the cheese sauce just before you serve. Accompany this with a nice tossed salad. Takes awhile to prepare but is well worth it!
