This is a modern take on the brown sugar and grapefruit classic. Broiling the flesh of a mango brings out its juicy sweetness. Make it even more special by sprinkling chopped candied ginger overtop just before serving.
3 firm but ripe mangoes
pinches ground ginger, optional
4 tbsp granulated sugar, or brown sugar
Position an oven rack in top third of oven. Preheat broiler. Do not peel mangoes. Slice both cheeks from stone of each mango. Place them, flesh-side up, on a rimmed baking sheet. Sprinkle with ginger, then with sugar.
Broil on top rack of oven until sugar caramelizes and flesh turns lightly brown, 3 to 6 min. Remove to plates. Best served warm.
