Squash is the seasonal favourite this time of year. Among the different varieties, butternut squash is the easiest to work with. It has a long-necked bell shape, with smooth beige-coloured skin. It’s easier to peel and has a smaller ration of seeds-to-flesh. For perfect peeling, make a slit in the skin and microwave on high for three to six minutes—just to soften the skin. Using a sharp knife, cut off and discard the peel. Slice squash in half lengthwise, then scoop out and discard seeds.
