Fresh herb & bacon salad
Combine 3 cups chopped parsley and 1/4 sliced sweet onion in a bowl. Pan-fry 3 slices chopped bacon until crisp. Spoon bacon and fat into salad. Add 2 tbsp each lemon juice and grated parmesan. Toss to coat.

Modern baba ghanouj
Whirl 2 roasted Japanese eggplants with 1 cup chopped parsley, 1/4 cup olive oil, 2 tbsp cider vinegar, 2 garlic cloves and 1 jalapeno until smooth. Serve with crostini.
