Sauté 2 minced garlic cloves with 1 cup diced cremini mushrooms in 1 tbsp olive oil. Add 2 cups cooked brown rice, 1/4 cup chicken broth and a pinch of salt. Simmer until liquid evaporates. Drizzle with lemon juice.
Slice and sauté with fresh thyme. Stuff into a grilled cheese sandwich.
