Stir 1 cup grated cheese with 1/2 cup bread crumbs, 2 tbsp oil and 1/2 tsp cayenne in a bowl. Cut 1 cauliflower into florets and arrange on a baking sheet. Sprinkle with cheese mixture. Bake at 350F until tender, about 45 min.
Heat 3 tbsp 35% cream in a non-stick frying pan. Add 4 cups chopped kale. Cook, stirring occasionally, until kale wilts. Stir in 1 cup grated cheese and 1 tsp nutmeg. Serve with steak or roast beef.
