Stir 1 cup canned lentils, rinsed and drained, with 2 cups cooked rice, 1/2 cup chopped coriander, 3 sliced green onions and 1/4 tsp salt. Serve cold.
Toss with grape tomatoes, fresh herbs and salad greens. Dress with olive oil and red wine vinegar.
