Bombay trail mix
Heat 1 tbsp oil in a pan. Add 1 tsp minced ginger, 1/2 tsp each minced green chili, ground cumin, ground coriander and 1/4 tsp turmeric. Add 1/3 cup frozen peas (thawed) until warmed through. stir in 1 cup puffed quinoa and 1/4 cup each chopped cashews and fried shallots.
