Apple fritters
Slice peeled, cored apples into 1/2-in.-thick rings. Coat completely with pancake batter. Pan-fry in butter until golden on both sides. Serve warm, drizzled with maple syrup.
Cinnamon apple chips
Slice apples into very thin rounds with a mandoline. Sprinkle both sides with cinnamon, sugar and nutmeg. Bake at 225F until crisp, flipping halfway through, about 2 hours.
