Boil 2 cups apple cider with 1/3 cup sugar and 3/4 tsp pumpkin-pie spice. Stir in 7-g pkg powdered gelatin until dissolved. Pour into Mason jar and refrigerate until set. Serve on a cheese platter with fresh apples and pears.
One-pot chicken stew
Pan-fry bone-in, skin-on chicken thighs in a large pot with 2 tsp oil until brown. Add 1/2 cup each chopped onion, celery and carrot. Pour in 1 cup each apple cider and chicken broth and 3 tbsp apple cider vinegar. Simmer until vegetables are tender. Serve over quinoa.
