Corn tortillas

Cheater's pie crust
Place 4 or 5 tortillas in a lightly greased 9-in. pie plate, overlapping and covering the centre and up the sides of the plate. Pour in your favourite quiche mixture. Bake as directed.

Mexican omelette
Melt 2 tbsp butter in a large non-stick pan. Add 1/4 cup each chopped onions and red peppers. Add 3 tortillas, thinly sliced. Beat 3 eggs with 1/4 tsp salt. Pour into pan. Cook, stirring occasionally, until eggs are cooked. Serve with sour cream and chives.
