Ingredients

  • 8 eggs
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 small red bell pepper , chopped
  • 1 green onion , thickly sliced
  • 1 cup chopped ham
  • 1 cup frozen hash browns
  • 1/2 cup grated manchengo or cheddar

Instructions

  • Preheat oven to 350F (180C). Lightly coat an 8-in. (2-L) baking dish with vegetable oil. In a large bowl, whisk eggs with seasonings. Stir in pepper, onion, ham, frozen hash browns and cheese. Turn into baking dish and stir to evenly distribute ingredients. It will look chunky.
  • Bake, uncovered, in centre of oven until centre is set when dish is jiggled, 30 to 40 min. Let stand 5 min, then slice.
