Roasted sausage-and-pepper pasta toss

Ingredients

  • 4 sausages, such as hot or sweet Italian, about 500 g

  • 1 large red onion

  • 4 bell peppers, preferably different colours

  • 4 to 6 large garlic cloves

  • 2 tbsp olive oil

  • 900-g pkg spaghetti or fettuccine pasta

  • 6 medium ripe tomatoes

  • 1 cup coarsely chopped fresh basil

  • 1 tsp salt

  • freshly grated parmesan

Instructions

  • Preheat oven to 450F (230C). Slice each sausage into 4 pieces. Spread out on a large, ungreased baking sheet with shallow sides. Roast in centre of preheated oven 10 minutes. Meanwhile, slice onion in half, then slice each half into 8 thin wedges. Core and seed peppers, then slice in half. Place onion, garlic and peppers in a large bowl. Drizzle with oil and stir to coat. Remove sausages from oven and stir. Tumble vegetables onto pan and spread out vegetables and sausages in a single layer. Return to oven and continue roasting until vegetables start to soften, about 10 more minutes.

  • Meanwhile, bring a large saucepan of water to a boil. Then add pasta and cook according to package directions, about 10 minutes. When vegetables have roasted 10 minutes and sausages are cooked, remove pan from oven. Transfer sausages to a large bowl. Cover with foil to keep warm. Stir vegetables. Add whole tomatoes to baking sheet. Return to oven. Roast until vegetables are lightly charred and tomato skins have split, about 10 more minutes.

  • Remove tomatoes and peppers to a chopping board. Coarsely chop into bite-size pieces. Remove garlic and finely chop. Add to sausage bowl along with any juices on cutting board. Scrape onions and juices on baking sheet into bowl. Immediately add hot drained pasta. Gently toss until well mixed. Stir in basil and salt. Serve immediately with freshly grated Parmesan and crusty bread.
