Salty and tangy, this fiery Korean condiment is popping up everywhere from your local hole-in- the-wall to fine-dining restos. Try it for yourself in these spicy, cheesy quesadillas!
- green onion kimchi
- grated cheddar , or mozzarella
- 2 tortillas
- COMBINE chopped green onion kimchi with grated cheddar or mozzarella. Scatter mixture over half of each tortilla.
- FOLD to enclose filling. Heat a non-stick frying pan over medium. Spray with oil and lay folded tortillas in pan. Heat until bottoms are toasted. Flip and continue cooking until cheese is melted.
- TRANSFER to a cutting board and cut each into 4 wedges. Serve immediately.
