Christmas peameal bacon

- 1 kg piece peameal bacon
- 1/4 cup rye , or apple or orange juice
- 2 tbsp brown sugar
- Preheat oven to 350F (180C). Place bacon in an oiled baking dish, such as an 8-in. (2-L) square dish. Stir whiskey with brown sugar until dissolved. Spoon evenly over cornmeal coating. Bake, until bacon is hot and top is golden brown, about 45 to 50 minutes. Slice thinly. This bacon is a nice accompaniment to French toast.
