Caramelized sweet potatoes

Ingredients

  • 2 medium sweet potatoes
  • 1 tbsp olive oil
  • 1/8 tsp salt
  • 1/8 tsp fresh pepper

Instructions

  • Preheat oven to 425F. Peel 2 medium sweet potatoes and slice into 1/2-in. rounds. Place on a baking sheet. Toss with 1 tbsp olive oil, 1/4 tsp salt and fresh pepper until coated. Roast, flipping halfway through, until caramelized, 25 to 30 min.
