Smoky cheese grits

Ingredients

  • 1 cup corn grits , or medium ground polenta
  • 3/4 tsp salt
  • 1 cup grated smoked cheddar
  • 1/2 cup chopped cilantro

Instructions

  • Combine grits with 2 cups water and salt in a large saucepan and set over medium. Cook, whisking often, until grits start to thicken, 5 to 6 min. Add 2 more cups of water. Whisk often until mixture starts to thicken again, about 8 min. Stir in 1 more cup of water and continue whisking until grits are tender and slightly thickened, 8 to 10 more min.
  • Stir in grated cheddar and half of cilantro. Scoop into bowls and garnish with remaining cilantro. Top with Spicy Lemon Shrimp and drizzle with pan juices.

Shopping Tip:

Corn grits and polenta are both ground corn, but polenta has a finer grind.
