Mashed Potatoes for Two

Quarter potatoes and place in a large saucepan. Cover with water. Boil gently, covered, until very tender, 20 to 25 min. Then drain and mash with a potato masher. Add butter and salt. Beating with a wooden spoon or electric mixer, gradually beat in milk until as creamy as you like. Taste and add more salt if needed.
